Sautéed Cherry Tomatoes with Mozzarella

Make it Peppers! Sauté one sliced bell pepper in 1 tbsp of oil; once softened, add cherry tomatoes and follow recipe as above. Serve with grilled sausages and toasted bread slices.

Ingredients:

2 bunches cherry tomatoes on the vine, vine removed, stems attached 1 tbsp olive oil salt and freshly ground black pepper 1/2 (340g) Tre Stelle® Mozzarella Ball, torn into small pieces fresh oregano and toasted pine nuts for garnish (optional)

Instructions:

In a large bowl, toss cherry tomatoes with olive oil, salt, and pepper. Preheat a non-stick or cast iron skillet to medium-high. Add the tomatoes and sauté quickly until they are lightly browned and begin to soften. Remove from heat and place Tre Stelle® Mozzarella Cheese pieces in between the tomatoes. Cover and let the cheese melt. Sprinkle with fresh oregano and toasted pine nuts. Serve with toasted bread slices.
